Low-Fat Curried Turkey Burgers

|1 Tbsp mustard seeds|
|1/4 cup unsweetened applesauce|
|3/4 cup plus 1 Tbsp plain, nonfat yogurt|
|5 Tbsp mango chutney, mashed if chunky|
|3¼ tsp curry powder|
|3/4 tsp salt|
|1/4 tsp Cayenne pepper|
|1 lb ground turkey breast (98% fat free)|
|7 Tbsp green onion tops, chopped|
|7 Tbsp fresh mint, chopped (or 7 tsp dried)|
|1/4 cup tart green apple, chopped|
|Non-stick vegetable oil spray|
To make burgers: Shake mustard seeds in medium skillet over low heat until seeds begin to pop, about 2 to 3 minutes. Transfer seeds to bowl. Mix in applesauce, 1 Tbsp yogurt, 2 Tbsp chutney, 2½ tsp curry powder, salt, and Cayenne. Add turkey, 4 Tbsp onion tops, and 4 Tbsp mint. Combine gently and shape into four 3/4-inch-thick patties.
To make sauce: Combine apple, remaining yogurt, chutney, curry powder, onion tops, and mint in a small bowl.
Prepare grill. Spray burgers with nonstick spray; grill until cooked through, about 5 minutes per side. Top each burger with sauce and serve.
Reminder: Turkey burgers should be cooked to the internal temperature of 165°F or until no longer pink.
