Pecan Crusted Turkey Fillets

Adapted from Healthy Indulgences

Vegetable oil spray
1/2 cup DLM Honey Mustard
1½ cups cornbread stuffing mix, finely crushed
1/3 cup pecans, finely chopped
(4) 4-oz turkey fillets or cutlets

Preheat oven to 400°F. Lightly spray a baking pan with vegetable oil spray. Pour honey mustard on a large plate. On another large plate, mix together the stuffing and pecans.

Place fillets between 2 sheets of plastic wrap, and lightly pound with a mallet until 3/4-inch thick. Dip the turkey into the honey mustard. Dredge the turkey in the cornbread-pecan mixture until well coated, pressing crumbs gently to adhere. Bake for 10 to 15 minutes, turning once after 4 minutes. Do not overcook.
