Zucchini Bread

1 cup Vera Jane's Extra-Virgin Olive Oil
2 1/3 cups sugar
3 eggs
1 Tbsp vanilla
1/2 tsp baking powder
3 cups flour
1 tsp salt
2 cups zucchini, unpeeled and grated (about 2 medium)
1/2 cup walnuts
1/2 cup raisins (optional)
1 Tbsp cinnamon

Preheat oven to 350°F. Mix together oil and sugar; add eggs and vanilla, beating well. Sift together dry ingredients. Add slowly to egg mixture, and stir until well blended. Fold in zucchini, nuts, and raisins. Divide batter into 2 greased 8-inch loaf pans. Bake 45 to 60 minutes or until toothpick inserted into the middle of the loaf comes out clean.
