Melon Salad with Ginger, Mint, and Lime

Adapted from Bon Appétit

1 cantaloupe (or 5 cups of your favorite melon)
3 Tbsp fresh lime juice
3 Tbsp fresh mint, chopped
2 tsp grated lime peel
2 Tbsp sugar
2½ tsp fresh ginger, grated
2 tsp DLM 100% Pure Honey

Cut cantaloupe flesh into 1-inch cubes and place in a large bowl. Mix remaining ingredients in a small bowl until well combined. Add mixture to cantaloupe and blend until evenly distributed.
