California Waldorf Salad

Recipe from Food to Live By: The Earthbound Farm Organic Cookbook

1/3 cup non-fat plain yogurt or sour cream
1/3 cup mayonnaise
2 Tbsp fresh lime juice
1 tsp grated lime zest
2 tsp curry powder
1/2 tsp honey or sugar
1/2 cup thinly-sliced celery
1/2 cup raisins
1/2 cup halved, seedless grapes
1 unpeeled diced apple
1/2 cup toasted pecans or walnuts
5 oz baby spinach or mixed greens

Place the yogurt, mayonnaise, lime juice, lime zest, curry, and honey in a small bowl and whisk to combine. Place the celery, raisins, grapes, apples, and the nuts in a large bowl. Add about half of the yogurt dressing and stir to combine. Just before serving, add the spinach, and toss to combine. Add additional dressing if needed.
