Baja Fruit Salad

10 oz fresh pineapple chunks
(1) 15-oz can mandarin oranges, drained
½ cup roasted red bell peppers, chopped
½ chopped jicama
1 Tbsp brown sugar
1 Tbsp fresh lime juice
1 Tbsp fresh cilantro, chopped
2 Tbsp shredded coconut

Combine all ingredients except coconut in a large bowl and toss well to mix. Top with coconut just before serving.
