Tillamook Dessert Pears

2 Anjou or Bartlett pears, halved and cored
2 Tbsp unsalted butter
2/3 cup white wine
2 Tbsp sugar
2 large grindings of pepper
1 cup shredded Tillamook Cheddar cheese
Ground cinnamon

Preheat broiler. Melt butter in a small skillet. Add wine, sugar, and pepper; bring to a boil. Boil until syrupy and reduced to 1/4 cup, about 5 to 7 minutes. Place pear halves cut side up in a baking dish. Top each with 1 tablespoon of wine syrup and 1/4 cup cheese. Sprinkle lightly with cinnamon.

Broil pears until cheese is bubbly, about 6 to 8 minutes.

(If pears are cored ahead of time, brush with lemon juice to prevent browning.)
