Winter Citrus Salad

1 pummelo
3 navel oranges, peel removed, and cut into ¼-inch-thick half slices
Half the seeds from a pomegranate
Juice of ½ fresh lime
1 Tbsp honey
¼ tsp fresh grated ginger
½ tsp thinly sliced mint leaves, optional

Cut off 2 inches from the stem and blossom end of pummelo. Cut the peel of the pummelo off (remove all of the white

membrane). Break pummelo into sections and remove the hard membrane between and surrounding the fruit pulp. Break the pulp into pieces and place in a large bowl along with orange and pomegranate seeds. In a small container, mix together lime juice, honey, and ginger. Pour juice mixture over citrus and combine gently. Top with sliced mint leaves.
