Orange Poached Pears

4 large pears, peeled, halved, and cored
1½ cups orange juice
1/2 cup light brown sugar
1 cinnamon stick
¼ tsp grated fresh ginger
½ cup raspberries (optional)
4 oz sweetened mascarpone or whipped cream (optional)

In a large pan, bring orange juice, brown sugar, cinnamon and ginger to a boil. Reduce heat and continue cooking until sugar is completely dissolved. Add pears and continue cooking for 15–20 minutes, until tender but firm. Using a slotted spoon, place each pear half in a dessert dish. Garnish each with 1 Tbsp sweetened mascarpone and raspberries. Drizzle with poaching liquid.
