Mediterranean Green Bean Sauté

3 cloves garlic, chopped
3 Tbsp Vera Jane's Extra-Virgin Olive Oil
1½ lbs green beans, washed and trimmed
1 pint grape tomatoes, washed and halved
1 tsp grated lemon rind
Salt and pepper, to taste
¼ cup chopped Italian parsley

Sauté garlic in olive oil until lightly browned. Add green beans, cover, and cook for an additional 7–10 minutes, stirring occasionally until tender. Gently mix in tomatoes, lemon rind, salt and pepper, and cook an

additional 2–3 minutes. Add parsley; toss and serve.
