Easy Lemon Bars

Crust and Topping:
1 egg
1/3 cup unsalted butter
(1) 18.25-oz pkg lemon cake mix
1/2 tsp baking powder
1/4 tsp salt
2 eggs
2 tsp lemon peel, grated
1/4 cup lemon juice
1 cup sugar
1/4 cup powdered sugar


Preheat oven to 350°F. Combine the egg, butter, and cake mix until crumbly. Reserve 1 cup of this mixture for topping. Pat remaining mixture in an ungreased 9x13x2-inch pan and press until firm. Bake 15 minutes or until light brown.


Place baking powder, salt, eggs, grated lemon peel, lemon juice, and sugar in a mixing bowl and beat until light and foamy. Pour over hot crust. Sprinkle reserved crumb mixture evenly over the filling.

Bake for 15 minutes or until light brown. Remove from oven and cool. Sprinkle with powdered sugar. Cut into bars 1½ x 2 inches.
