Roasted Potato Wedges

4 potatoes, peeled
1 Tbsp Vera Jane's Extra-Virgin Olive Oil
1 tsp kosher salt

Cut potatoes into wedges. Pour oil and salt into a medium- sized bowl. Toss wedges in oil. Place on a jellyroll pan and roast at 425°F for 25 minutes. Raise the oven temperature to 475°F and brown the potatoes for about 5 minutes. Makes 4 servings
