Peanut Sesame Noodles

12 oz spaghetti or linguine
3/4 cup soy sauce
1/2 cup peanut butter
3/4 cup low-salt chicken broth
1 Tbsp sesame oil
1 Tbsp honey
2 tsp minced garlic
Chili oil, to taste
2 cups fresh broccoli slaw
1 cup grated carrots
Crushed red pepper flakes

Cook pasta in salted water. While pasta is cooking, in a microwave-safe bowl stir together soy sauce, peanut butter, chicken broth, sesame oil, honey, garlic and chili oil. Microwave on 100% power for 2 minutes to melt peanut butter. Stir and reserve.

During the last two minutes of pasta cooking time, add the broccoli and carrots. Drain pasta and vegetables quickly in a colander, but do not rinse. Return to pot and toss well with peanut sauce and red pepper flakes. Serve immediately.Makes 4 servings
