This recipe, from Patty and José Manzano (former Produce Director), is for authentic Mexican guacamole.
3 ripe avocados
1 small sweet onion, finely chopped
1 small ripe tomato, chopped
1 clove garlic, minced
2 Tbsp chopped cilantro, if desired
Salt and pepper to taste
Peel and pit avocados. Place in a large bowl with onion, tomato, and garlic. Use two knives to coarsely chop avocados and mix them with onion and tomato. Season with cilantro, if desired, and salt and pepper to taste. Serve immediately. (If not serving immediately, add lime or lemon juice to prevent discoloration.)
