Fish Steak with Onion

Swordfish or shark baked with a cloak of wine and onions. Superb!

2 cups sliced onions
1 Tbsp butter
1 Tbsp Vera Jane's Extra-Virgin Olive Oil
Salt and pepper, to taste
Fresh thyme or oregano
1 lb fish steaks
1/4 cup bread crumbs
1 Tbsp chopped fresh parsley
1/3 cup dry white wine

Sauté onions in butter and oil until tender and translucent. Season and add fresh oregano or thyme. Set aside.

Season the fish steaks, dredge with flour and brown. Arrange fish in baking dish, cover with the onions, and top with bread crumbs mixed with parsley. Pour wine around fish. Bake steaks at 350°F about 25 to 35 minutes, basting occasionally until the top has browned lightly.Makes 4 servings
