Buttermilk Biscuits

A great appetizer, buttered then filled with slices of Heavenly Ham®.

3 cups all-purpose flour
2 Tbsp baking powder
2 Tbsp sugar
1 tsp salt
1 tsp cream of tartar
1/4 tsp cayenne pepper
1/2 cup solid vegetable shortening
1/2 cup (1 stick) cold unsalted butter, cut into chunks
1 cup buttermilk, at room temperature

Preheat oven to 375°F. In a food processor, combine the flour, baking powder, sugar, salt, cream of tartar, and cayenne pepper. Add the shortening and butter and pulse until the mixture forms coarse crumbs. Add buttermilk and pulse until a firm dough forms. (Add a bit more buttermilk if the dough is too thick.)

Knead the dough 8 to 10 times. Roll into a 1/2" thickness. Cut the dough into rounds. Bake on a greased cookie sheet 13-15 minutes.
