Lemon Vinaigrette

Best-quality ingredients make the best salad dressing. Toss room temperature vinaigrette with salad greens just before serving; use sparingly. Store unused vinaigrette tightly covered in the refrigerator.

2 Tbsp lemon juice
1/4 tsp salt
1/4 tsp dry mustard
Several grinds of fresh pepper
1/2 cup Vera Jane's Extra-Virgin Olive Oil
1 tsp finely minced shallots or scallions and/or fresh or dried herbs, such as chives, tarragon, basil (optional)

Combine lemon juice, salt, mustard and pepper. Whisk in oil and optional shallots, scallions or herbs. Makes 10 Tbsp
