Fruit Pizza

1 1/2 cups flour
1/4 cup sugar
1/4 cup butter
1/4 cup vegetable oil
3 Tbsp cold water

Cream cheese layer:
(2) 3-oz pkgs cream cheese, softened
1/4 cup sugar
1/2 tsp vanilla
Assorted Fresh fruit to cover, such as sliced peaches, strawberries, kiwi, blueberries, etc.

1/2 cup currant jelly
1 Tbsp water


Preheat oven to 375°F. Combine flour and sugar; cut in butter with a pastry blender until mixture resembles coarse meal. Stir in oil with a fork until all ingredients are moistened. Add water 1 Tbsp at a time, mixing with a fork. Form dough into a ball and place ball on a cooking sheet sprayed with non-stick vegetable spray. Use a lightly floured rolling pin to roll out to an 11-inch circle. Bake until lightly browned, 12 to 14 minutes. Cool on baking sheet for 10 minutes; remove to wire rack to cool completely.

Cream Cheese Layer:

Combine ingredients and beat until smooth. Place cooled crust on a serving platter and spread with cream cheese mixture. Top with fruit.


Combine jelly and water in a small saucepan and heat over low heat until jelly melts. Spoon evenly over fruit.

Refrigerate before serving. Best served within 3 hours of preparation.
