Fish Steaks With Lemon Oregano Sauce
Use a firm-fleshed fish, such as tuna, swordfish, or shark, for this quick & easy, absolutely delicious preparation!
2 tsp kosher salt
4 Tbsp fresh lemon juice
2 tsp dried oregano
1/2 cup Vera Jane's Extra-Virgin Olive Oil
Freshly ground pepper, to taste
2 lbs fish steaks, sliced 1/2" thick
Using a whisk, combine the salt and lemon juice in a small bowl until the salt is dissolved. Add the oregano. Whisk in the olive oil in a slow, steady stream. Add pepper, to taste.
Reserve 1/2 of the sauce and marinate steaks 15 to 30 minutes in the remainder. Grill steaks 1 to 1 1/2 minutes on each side. (The surface will not brown.) Do not overcook.
Place the steaks on a warm platter, and top with the reserved sauce. Makes 8 servings
