Carrot Apple Salad

2 cups grated organic carrots
1 chopped Braeburn apple
3 Tbsp lemon juice, to taste
1 Tbsp finely chopped cilantro
1/4 tsp kosher salt
1 jalapeño pepper, halved and seeded, for garnish

In a medium-sized bowl, combine the carrots, apple, and the lemon juice. Add the cilantro and salt. Garnish with a jalapeño pepper.Makes 5 servings
