Roasted Potato Slices
4 Tbsp unsalted butter, melted
4 Golden Yukon potatoes, scrubbed
2 tsp kosher salt (or to taste)
4 tsp fresh rosemary, chopped
Freshly ground pepper to taste
Preheat oven to 425°F. While the oven is heating, melt butter in a 9-inch pan in oven. Pour 1/2 melted butter in a small, heat-proof dish. Reserve.
Cut potatoes into 1/4-inch slices. Arrange overlapping slices in the pan, keeping each potato serving separate. Pour remaining butter over slices. Sprinkle with salt, rosemary, and pepper. Bake until crispy, about 40 to 50 minutes, turning each potato once.
