Tapas with Manchego Cheese

1/2 DLM French baguette, cut into 24 slices
2/3 lb Manchego cheese
5 vine-ripened tomatoes
1/4 cup Vera Jane's Extra-Virgin Olive Oil
Salt and freshly ground pepper
Small basil leaves for garnish

Toast bread slices under broiler until lightly brown. Slice Manchego into 1/4-inch slices. Cut each slice into 4 pieces (24 pieces needed). Coarsely grate remainder of cheese.

Top each baguette slice with 1 piece of Manchego and 1 tomato slice. Drizzle with olive oil; season with salt and pepper. Sprinkle with grated Manchego. Broil the rounds for 2 minutes or until the cheese is bubbly. Garnish with basil. Makes 24 tapas
