Caramel-Glazed Apples and Pears with Mascarpone

2 Tbsp slivered almonds
2 apples (Fuji, Gala, or Golden Delicious)
2 pears (Anjou, Bartlett, or Comice)
1/2 lemon
3 Tbsp unsalted butter
3 Tbsp sugar
1/2 tsp almond extract
1/2 cup mascarpone cheese

Toast almond slivers in a dry pan over medium-low heat until just brown and fragrant. Peel and core apples and pears. Cut each into 1-inch pieces. Squeeze half of the lemon juice over the fruit and combine well.

Melt butter in skillet. Add sugar to cook over medium-high heat, stirring until sugar begins to caramelize. Add fruit and continue to cook (caramel may harden), stirring until caramel melts and fruit softens (about 7 to 10 minutes).

Turn off heat and combine almond extract with fruit. Divide fruit into four dishes. Top each dish with about 2 Tbsp mascarpone and 1/4 of the toasted almonds.
