Black Diamond Cheese Dip Gluten Free

3 cups Black Diamond Cheddar, shredded (about 1/2 lb)
1 cup Jarlsberg cheese, shredded (about 1/4 lb)
2 Tbsp Bob's Red Mill Gluten Free All-Purpose Flour
1 small onion, minced
1 Tbsp unsalted butter
3/4 cup Red Bridge Beer
1/2 cup DLM Tomatoes, drained and chopped fine
1/2 of (1) 12-oz jar pickled Jalapeño peppers, minced
DLM Organic Multigrain Tortilla Chips, for serving

In a bowl, toss the cheeses with the flour and reserve the mixture. In a large heavy saucepan, cook the onion in the butter over moderately low heat, stirring, until it is softened. Add the beer, tomatoes, and Jalapeños and simmer for 5 minutes. Add the reserved cheese mixture by 1/2 cupfuls to the beer mixture, stirring after each addition until the cheeses are melted. Serve warm with tortilla chips. Makes about 4 cups
