Fettucini with Bleu d'Auvergne
(1) 12-oz bag Al Dente pasta
1 Tbsp Vera Jane's Extra-Virgin Olive Oil
4 oz Bleu d'Auvergne cheese
Freshly ground pepper
Cook pasta as directed in a large pot of salted water. While pasta is cooking, add olive oil to a large bowl. Cut cheese into small pieces. Before draining pasta, retain 1/2 cup of the cooking water. Drain pasta quickly and toss with olive oil in the bowl. Immediately add retained water and cheese pieces and lightly toss until cheese is melted. Season with pepper and serve immediately.
