Serrano Green Beans

1 lb green beans
2 Tbsp Spanish olive oil
2 thin slices Serrano ham, diced
1/3 cup Manchego cheese, grated

Blanch green beans only until crisp-tender. In a non-stick skillet, add the Spanish olive oil, then sauté the ham and green beans until warm and to the tenderness desired. Add Manchego cheese to the warm beans in the skillet. Put in a serving dish, and grate additional cheese over beans.
