Sweet and Sour Red Cabbage

3 Tbsp butter
2 Tbsp sugar
1 lb tart apples (such as Granny Smith), chopped
1 medium onion, chopped
1 head red cabbage, shredded
3 Tbsp Aunt Vera's Italian Red Wine Vinegar
1/2 tsp salt
Freshly ground pepper

Melt the butter in a large skillet; sprinkle in the sugar and heat for 2 to 3 minutes or until the sugar is dissolved. Add the apple and onion and cook, stirring, until they are limp, about 5 minutes. Stir in the cabbage and cook 5 minutes more. Add Aunt Vera's Italian Red Wine Vinegar, salt and pepper; cover tightly and cook over low heat until cabbage is wilted, about 10 minutes.
