Bacon Flank Steak Pinwheel with Andouille Sauce

4 ea DLM Flank Steak Pinwheels
1/2 cup DLM Peppered Uncured Bacon, diced
1 cup Andouille sausage, diced
1/2 cup celery, diced
1/2 cup onion, diced
1/2 cup green pepper, diced
1/2 cup sliced mushrooms
1/2 cup butter, melted
1/2 cup flour
1 tsp salt
1 tsp cumin
1 Tbsp cajun seasoning
1 tsp file powder
1 cup beef stock
2 to 3 Tbsp tomato paste

Pan-sear DLM Flank Steak Pinwheel. Place in oven at 375°F till desired doneness. Approximately 20-25 minutes for medium doneness.

Prepare Andouille Sauce:

Heat a saucepan to medium and add bacon. Sauté till crisp. Add Andouille sausage, celery, onion, and green pepper. Sauté till onions are clear. Add butter and melt until the butter is golden brown. Remove from heat and add flour. Bring back to heat and cook thoroughly. Add salt, cumin, cajun seasoning, file powder, and stock. Stir and bring to a boil. Reduce to a simmer and add tomato paste. Simmer sauce until pinwheel is ready to serve. Pour sauce over roast.
