Skewered Sweet Onions
5 large sweet onions peeled and quartered lengthwise, leaving the root attached to each quarter
Vera Jane's Extra-Virgin Olive Oil
1/4 cup Aunt Vera's Italian Red Wine Vinegar
Juice of one lime
Pinch of sugar
1/2 cup Vera Jane's Extra-Virgin Olive Oil
2 Tbsp soy sauce
Freshly ground pepper, to taste
1 Tbsp freshly chopped thyme
Skewer the onion quarters on metal skewers. Brush lightly with olive oil and grill over coals, turning until golden brown and tender. Remove from skewers, and pile into a bowl.
Combine marinade ingredients, and pour over hot onions. Marinate at least one hour. Serve at room temperature.
