Butterbeer

2 Tbsp butter
cup brown sugar
cup heavy cream
tsp sea salt
tsp vanilla extract
3 cup DLM 100% Apple Cider
1 cup ginger ale
Whipped cream, for garnish

First, make the butterscotch syrup by melting the butter in a saucepan over medium heat. Add the brown sugar, heavy cream, and sea salt. Whisk to combine. Bring to a gentle boil and cook, stirring occasionally, for 5 minutes.

Stir in vanilla and apple cider and heat until the butterscotch syrup has dissolved and is very hot. Remove from heat and whisk in ginger ale to taste. Generously dollop with whipped cream.
