Kiss Melon Salsa

2 cups Kiss Melon, cut into a small dice (1/2 of a melon)
3/4 cup finely chopped red onion
3 Tbsp finely chopped jalapeño pepper, seeds removed
3 Tbsp finely chopped fresh cilantro
1 1/2 tsp finely chopped chipotle chilies in adobo sauce, seeds removed
1/2 tsp sea salt

Place the diced melon in a medium-sized bowl, and add the remaining ingredients. Gently mix until everything is evenly combined.

Serve chilled.

Makes 2 3/4 cups servings
