Baked Brie with Cranberry and Orange Marmalade Sauce
2 cups cranberries (fresh or thawed frozen)
½ cup sugar
2 tsp cornstarch
½ cup water
½ cup DLM Bittersweet Orange Marmalade
1 brie wheel (12 to 16 oz)
Crushed pistachios for garnish (optional)
Heat oven to 375°F. Zest orange and reserve for garnish. Wash cranberries and remove blemished berries.
In a 2 quart saucepan, mix sugar and cornstarch. Stir in water. Heat to boiling over medium-high heat, stirring occasionally. Stir in cranberries, heat to boiling. Simmer uncovered 5 to 8 minutes, stirring occasionally, until cranberries pop. Remove from heat and stir in marmalade.
Bake the brie for 15 minutes until soft and warm. Spread the cranberry mixture over the brie and garnish with orange zest and pistachios if desired. Serve with baguette slices.
