Hatch Pepper Cheddar Rice - Gluten Free

1 Tbsp Vera Jane's Extra-Virgin Olive Oil
2 cloves garlic, minced
5 green onions, chopped
1 cup bell pepper (your choice of color), chopped
1/4 cup Roasted Hatch Green Chiles, chopped
2 Tbsp dry white wine
2 cups Padma's Easy Exotic Organic Cooked Rice
2/3 cup half and half
2 cups Hatch Pepper Cheddar, shredded
Salt and pepper

In a sauté pan over medium high heat, add olive oil and sauté garlic and bell peppers until peppers are slightly tender. Add green onion, Roasted Hatch Chiles, and white wine. Sauté until majority of wine has dissipated. Reduce heat to medium low and add cooked rice, half & half, salt, pepper, and shredded Hatch Pepper Cheddar. Stir until cheese has melted. Serve hot.
