Zucchini and Mint

1 1/2 Tbsp Vera Jane's Extra-Virgin Olive Oil
1 1/2 Tbsp green onion tops, finely chopped
5 cups cubed zucchini (about 2 lbs)
1 1/2 Tbsp fresh flat leaf parsley, chopped
1/4 tsp salt
2 Tbsp fresh mint, torn
6 Tbsp feta cheese, crumbled

Heat oil in a non-stick pan over medium-high heat. Add green onions and sauté one minute, stirring frequently. Add zucchini, parsley, and salt to pan. Reduce heat to medium-low and continue cooking for 15 to 20 minutes, until zucchini is tender. Add torn mint and cook one additional minute. Serve on a large platter sprinkled with cheese. Serve with warmed Greek pita or flatbread.
