Greek Style Grilled Sardine

2 lbs sardine, whole, headed and gutted
1/2 cup Vera Jane's Extra-Virgin Olive Oil
2 lemons, juiced
5 garlic cloves, minced
1/4 cup fresh parsley, chopped
1/2 cup fresh oregano, chopped

Mix all ingredients in shallow glass bowl. Add sardine to bowl and , if necessary, add water to cover them. Marinate sardine in refrigerator for at least 30 minutes. Remove sardines from marinade. Place in hinged fish basket. Place on grill for 4 minutes. Turn. Grill for approximately 5 ore minutes until internal temperature reaches 145 degrees.

Serve with a vegetable medley of red onion, red bell pepper, spinach leaves, tomatoes, Kalamata olives, olive oil, garlic and fresh oregano.
