Crispy Fish Sandwich

1/4 cup panko bread crumbs
1¼ lb haddock or cod, skinned and cut into 4 portions
1/2 tsp Joe’s Stuff Seasoning
1/4 tsp sea salt
4 tsp Vera Jane’s Extra-Virgin Olive Oil
8 slices DLM 100% Whole Grain Bread, toasted

Place panko in a shallow bowl. Sprinkle both sides of fish with Joe’s Stuff and salt. Dredge fish in the panko. Heat 2 tsp oil in a large non-stick skillet over medium-high heat. Add half the fish and cook until golden, about 2 minutes per side. Transfer to a plate and repeat with the remaining 2 tsp oil and fish, adjusting heat as necessary to prevent burning. Top toasted bread with the fish to make sandwiches. Serve Immediately.
