Quick Fresh Salsa - Gluten Free

1/2 cup freshly roasted green chiles, skinned and seeded
1 ripe tomato, chopped
1/2 sweet onion, chopped
Squeeze or two of fresh lime
1/4 cup Vera Jane's Extra-Virgin Olive Oil
Pinch of salt, pepper, and sugar to taste
Jalapeño pepper, minced (optional)
Cilantro, chopped (optional)

Mix together the chiles, tomato, and onion and stir in other ingredients, adding the sugar if needed to balance out the heat.
