Try these quick, meatless Lasagna Roll-Ups for a filling lunch or dinner.
8 to 10 lasagna noodles
Goat cheese, softened
2 small zucchini, thinly sliced lengthwise (use a mandoline), blanched
2 carrots, shredded and blanched
2 roasted red peppers, seeded and cut into strips

Cook lasagna noodles according to package directions. Cool. Cut the lasagna noodle in half lengthwise, giving you two short pieces. Spread the goat cheese on top of the noodle. Layer a slice of zucchini, shredded carrots, and red pepper. Roll and enjoy. Use the DLM Original Marinara as a dipping sauce.
