Lemon Tri-Color Pagoda Pasta with Artichokes Gluten Free
(1) 8-oz pkg Ancient Harvest Gluten Free Organic Pagoda Pasta, cooked*, drained, and cooled
3 Tbsp Vera Jane's Extra-Virgin Olive Oil
1 Tbsp lemon juice
1/2 tsp fresh ground pepper
1 clove garlic, minced
4 green onions, sliced
(1) 10-oz jar DLM Marinated Artichoke Quarters, drained
10 cherry tomatoes, halved
Cook pasta according to directions and set aside. Mix olive oil, lemon juice, pepper, and garlic in a large bowl. Add pasta, onions, and artichokes; toss to coat. Just before serving, add tomatoes and sprinkle with Parmigiano-Reggiano.
*Gluten free pasta easily overcooks, check for al dente before recommended time.
