Grilled Maple Cinnamon French Toast Gluten Free

6 large eggs
1½ cups whole milk
1/4 cup DLM 100% Maple Syrup
1 Tbsp vanilla
1 Tbsp DLM Ground Cinnamon
8 slices Éban's Bakehouse bread
Cooking spray
Confectioner's sugar
Cut-up fresh berries (strawberries, raspberries, and blueberries)

In a large bowl, whisk eggs, milk, maple syrup, vanilla, and cinnamon. Arrange the bread in one layer in a large baking dish and pour egg mixture over the bread. Let the bread stand for 10 minutes at room temperature, turning the bread occasionally so that all the slices get a chance to sit in the egg mixture on both sides. Prepare the grill for direct cooking over medium-low heat (about 350°F). Brush the cooking grates so they are clean. Tip one slice on its side so that any extra liquid runs off. Spray both sides with the oil and place on the grill; repeat with the remaining slices. Grill over medium-low heat, with the lid closed as much as possible. Grill until firm on both sides and golden brown, 6 to 8 minutes, turning once. Remove from the grill, dust with confectioner's sugar, and top with cut-up fresh berries.
