Blackened Tilapia Sandwiches

Adapted from Cooking with Paula Dean

1½ lbs tilapia fillets
1 Tbsp Joe's Stuff Seasoning
2 Tbsp butter
4 to 6 hoagie buns; split, buttered, and toasted
(1) 10-oz pkg shredded lettuce
1 tomato, thinly sliced
Super-Duper Sauce
1 cup mayonnaise
1 Tbsp green onion, minced
2 tsp fresh lemon juice
2 tsp sweet pickle relish
2 tsp hot sauce
1 tsp DLM Creole Seasoning

Sprinkle tilapia with Joe's Stuff Seasoning. In an extra-large skillet, melt butter over medium-high heat. Add tilapia and cook for 2 to 3 minutes per side or until fish flakes easily with a fork. Spread cut sides of rolls with desired amount of sauce. Top bottom halves of rolls with shredded lettuce, sliced tomato, and tilapia. Cover with top halves of rolls. Serve immediately.

To prepare sauce:

In a small bowl, combine mayonnaise, green onion, lemon juice, relish, hot sauce, and DLM Creole Seasoning. Cover and store in refrigerator up to 3 days.
