Wild Greens with Warm Pancetta Dressing

1/4 lb pancetta, thinly sliced and chopped
1/3 cup Vera Jane's Extra-Virgin Olive Oil
1 Tbsp Aunt Mary's Italian White Wine Vinegar
1 Tbsp lemon juice
Pinch of sugar
1 lb fancy mixed greens or mesculin
2 Tbsp pine nuts, toasted
1/4 cup Gorgonzola cheese, crumbled
Salt and pepper to taste
In a small sauté pan, sauté the pancetta till crisp. Add the olive oil, vinegar, lemon juice, and the pinch of sugar. Simmer for 1 minute. Season with salt and pepper.
Place the greens in a large bowl and toss with the warm dressing, pine nuts, and Gorgonzola. Serve.
