Chicken Cacciatore

3 DLM Chicken Bonless, Skinless Breast Halves
1 Tbsp lemon juice
2 Tbsp Vera Jane's Extra-Virgin Olive Oil
1 clove garlic, minced
1 large onion, halved and sliced
(1) 15-oz can tomato wedges
1 large green pepper
1 bay leaf
(1) 8-oz can tomato sauce
(1) 6-oz can tomato paste
1/4 cup water
1/2 tsp celery seed
1 tsp basil
1/2 tsp salt
1/4 tsp pepper
1/4 cup Sauterne
8 oz vermicelli or other pasta

Cut DLM Chicken into 3x1-inch pieces. Drizzle with lemon juice. Heat Vera Jane's Extra-Virgin Olive Oil in large skillet. Add DLM Chicken and brown on all sides. Remove DLM Chicken with slotted spoon. In same skillet, sauté onion and garlic about 3 minutes. Add tomato wedges, including juice, green pepper, bay leaf, and browned DLM chicken.

Combine tomato sauce, tomato paste, water, and all spices in a bowl. Add sauce to skillet; cover and simmer for 30 minutes. Blend Sauterne into skillet mixture, and simmer gently an additional 15 minutes, uncovered. Cook pasta; drain and place on a warmed serving platter. Top with chicken and sauce and serve.
