Boneless Pork Center Loin Roast

(1) 2-lb duBreton Natural Pork Boneless Pork Center Loin
1 clove garlic, minced
2 tart apples, peeled and sliced
1/2 large onion, peeled and thinly sliced
1 Tbsp Vera Jane's Extra-Virgin Olive Oil
Freshly ground pepper
Apple or currant jelly (optional)

Preheat oven to 350F. Using a sharp knife, make a lengthwise pocket in pork loin. Stuff with garlic and a few apple and onion slices. Seal pocket with toothpicks.

Brown loin in medium-hot oil. Place remaining apple and onion slices in a baking dish and top with browned loin. Generously sprinkle with freshly ground pepper.

Roast uncovered until internal temperature reaches 160F, approximately 25 to 30 minutes per pound. Do not overcook. For easier carving let stand, loosely covered, 10 to 15 minutes.

Suggestion: For a glazed pork loin, top with apple or currant jelly the last 10 minutes of roasting.
