Boneless Pork Center Loin Roast

(1) 2-lb duBreton Natural Pork Boneless Pork Center Loin
1 clove garlic, minced
2 tart apples, peeled and sliced
1/2 large onion, peeled and thinly sliced
1 Tbsp Vera Jane's Extra-Virgin Olive Oil
Freshly ground pepper
Apple or currant jelly (optional)

Preheat oven to 350°F. Using a sharp knife, make a lengthwise pocket in pork loin. Stuff with garlic and a few apple and onion slices. Seal pocket with toothpicks.

Brown loin in medium-hot oil. Place remaining apple and onion slices in a baking dish and top with browned loin. Generously sprinkle with freshly ground pepper.

Roast uncovered until internal temperature reaches 160°F, approximately 25 to 30 minutes per pound. Do not overcook. For easier carving let stand, loosely covered, 10 to 15 minutes.

Suggestion: For a glazed pork loin, top with apple or currant jelly the last 10 minutes of roasting.
