Easy Marinated Chicken

 

Ingredients:

  • 4 whole chicken breasts (about 3 1/2 lbs)
  • 1 garlic clove, peeled, minced
  • 1/4 tsp lemon zest, minced
  • 1 Tbsp white wine vinegar
  • 2 tsp fresh oregano leaves
  • 1 Tbsp minced, fresh Italian parsley leaves
  • 1 Tbsp salad oil
  • 3 Tbsp olive oil
  • Salt & freshly ground pepper

Directions:

Combine garlic, lemon zest, vinegar and herbs. Whisk in oils in a slow, steady stream. Add salt and pepper to taste. Marinate at least 4 hours or up to 24. Cook chicken to an internal temperature of 165°F.
