Chicken al Forno

A winning recipe from DLM's Healthy Alternative Recipe Contest 1992. Submitted by Joan King.

Ingredients:

  • 4 chicken breast halves, skinned
  • 1/2 cup low-calorie Italian dressing (we prefer Good Seasons No Oil Italian Dressing in the package)
  • 1-2 onions, diced
  • 8 oz. mushrooms, sliced
  • 2 tomatoes, quartered, cut in pieces
  • 1 green pepper, sliced
  • 1/4 cup shredded part-skim mozzarella cheese

Directions:

Cut visible fat from chicken. Marinate in Italian dressing for several hours. Drain. Preheat oven to 375 degrees F. Put chicken breasts in an 8x8 pan. Bake, uncovered, for 20 minutes. Add vegetables and top with cheese. Bake another 20 minutes.
