Chicken Naranja

A Mexican comfort food with an Oriental touch.

Ingredients:

  • 2-3 lbs chicken thighs
  • 1 cup orange juice
  • 1/3 cup soy sauce
  • 1/4 cup packed brown sugar
  • 1/4 tsp ginger
  • 2 Tbsp cornstarch mixed with 1/2 cup water

Directions:

Arrange chicken skin side up in a single layer in a large shallow baking dish. Mix orange juice, soy sauce, brown sugar and ginger; pour over chicken. Bake in preheated 350 degree F. oven for 50 minutes. Remove chicken; stir cornstarch mixture into pan juices. Put chicken, skin side down, back in baking dish. Bake for 10 minutes longer until sauce thickens. Skim fat from surface. Serve over rice; garnish with orange slices and parsley.

Note: Any chicken parts can be used, including a cut up, whole chicken. Remove visible fat from chicken before baking.

Makes 4 servings, two thighs per person
