Boneless Pork Center Loin Roast

Ingredients:

  • 1 (2 lb) boneless du Breton Pork Center Loin
  • 1 Tbsp Vera Jane's Extra-Virgin Olive Oil
  • 1 clove garlic, minced
  • 2 tart apples, peeled and sliced
  • 1/2 large onion, peeled, thinly sliced
  • Freshly ground pepper
  • Apple or currant jelly, optional

Directions:

Preheat oven to 350 degrees F. Using a sharp knife, make a lengthwise pocket in pork loin. Stuff with garlic and a few apple and onion slices. Seal pocket with toothpicks.

Brown loin in medium-hot oil. Place remaining apple and onion slices in a baking dish, and top with browned loin. Generously sprinkle with freshly ground pepper.

Roast, uncovered, until internal temperature reaches 160 degrees F., approximately 25-30 minutes per pound. Do not overcook. For easier carving, let stand, loosely covered, 10-15 minutes.

Suggestion: For a glazed pork loin, top with apple or currant jelly the last 10 minutes of roasting.
