Baked Chicken Breast

This method of cooking chicken results in moist, flavorful chicken -- be sure you don’t overcook it and dry it out. Use the meat for salads, sandwiches, or eat "as is".

Ingredients:

  • Thinly sliced onion
  • Fresh parsley
  • Fresh herbs, such as thyme
  • Boneless, skinless chicken breasts
  • Salt
  • Freshly ground pepper
  • Fresh lemon juice

Directions:

Generously butter a shallow baking pan. Preheat oven to 375°F. Scatter onion, parsley and thyme over the pan and lay the breasts out flat on top of the herbs. Sprinkle with salt, pepper and fresh lemon juice (use about 1 lemon / 8 breasts). Place in the oven and cook 20-25 minutes, or until just done -- the flesh should feel firm when pressed with a finger. Do not overcook!
