Wild Rice Turkey Salad

If you don't have leftover turkey, purchase fully cooked turkey breast from our meat department or Deli!

Ingredients:

  • 1/2 cup (2 oz) wild rice, cooked according to package directions
  • 1/2 cup brown rice, cooked according to package directions
  • 1 bunch scallions, chopped
  • Zest (grated rind) of 2 oranges
  • 1 pound turkey breast, cut into chunks
  • 5 dried tomato halves, slivered
  • 1 (3 oz) package slivered almonds, toasted
  • 1/2 cup red wine vinaigrette - click for recipe
  • Salt and freshly ground pepper to taste

Directions:

Combine all ingredients. Season to taste with salt and pepper. Serve at room temperature.
